Creamy, comforting and full of fresh flavour, this easy prawn risotto is a restaurant-qu ality dish you can make at home with minimal effort.

Ingredients:
- 200g prawns
- 1 tbsp butter
- 1 tbsp olive oil
- 2 garlic cloves
- 175g Arborio rice
- 100ml white wine
- 700ml chicken stock or vegetable stock
- 1 lemon (zest & juice)
- 40g parmesan cheese
- salt and pepper
- vegetable of your choice

Step 1) Heat your sauté frying pan and then add the olive oil and butter
Step 2) Once the butter has melted, add in the onions and cook for 5 minutes until soft
Step 3) Add in the garlic cloves and rice and stir until fully mixed and coated in oil
Step 4) Pour in the white wine and let it bubble until all the alcohol has evaporated
Step 5) Gradually add in the stock, one ladle at a time. After each ladle of stock, stir and let it absorb into the rice. Add all stock and let it simmer for around 15 minutes until the rice is creamy and has a slight bite to it.
Step 6) Add the prawns and vegetables, and cook for around 5 minutes until the prawns are pink and cooked through.
Step 7) Stir in the lemon juice, zest, parmesan, salt and pepper.
TIP: Add your favourite vegetables to personalise the dish - peas, spinach or asparagus all work beautifully.
