Ingredients:
- 6 bacon rashers (one reserved for garnish)
- 1 small onion
- 240g grated mozzarella cheese
- 500g macaroni pasta
- 50g butter
- 100g plain flour
- 750ml milk
- 1 tsp mustard
- Salt and pepper to taste

Step 1) Cut the bacon into small pieces and fry in your Nuovva® stainless steel frying pan. Reserve a little bacon to use as garnish later.
Step 2) Using the same pan, fry the chopped onion until soft and lightly golden, then set aside.
Step 3) Bring a saucepan of water to the boil and cook the macaroni pasta according to the packet instructions.
Step 4) In a large saucepan, melt the butter. Add the flour and stir well to form a smooth paste. Gradually pour in the milk while stirring to create a creamy sauce. Add the mozzarella cheese, mustard and season with salt and pepper.
Step 5) Return the cooked bacon and onions to the cheese sauce and stir well.
Step 6) Drain the cooked pasta and add it to the sauce, stirring until the macaroni is fully coated.
Step 7) Serve hot and garnish with the reserved crispy bacon.
TIP: Use a whisk while making the cheese sauce to prevent lumps and create a perfectly smooth, creamy texture.
