Chicken Casserole - One Pot Wonder

A true one-pot wonder, this chicken casserole recipe brings together tender chicken, earthy vegetables and rich, savoury gravy, all slow-baked to perfection in your Nuovva Cast Iron Dutch Oven.

Ingredients:

  • 4 chicken breasts or 8 chicken thighs
  • 3 carrots
  • 20g plain flour
  • 1 leek
  • 200g mushroom

Directions:

Step 1) Preheat the oven to 180°C

Step 2) Season the chicken and sear in your Nuovva® Dutch Oven. Once browned, remove the chicken from the pan.

Step 3) Add the onion and mushrooms to the cast iron pan and cook together for 1–2 minutes until fragrant..

Step 4) Add the carrots and flour to your Dutch oven and stir all ingredients together.

Step 5) Pour the stock into the pan a little at a time and then add the thyme.

Step 6) Return the chicken back into the pan.

Step 7 Cover your Dutch Oven pan with the lid and place it in the oven for 45 minutes.

Step 8) Add the leek into the Dutch Oven and return to the oven for a final 10 minutes.

 

Note: If you’d prefer more sauce/gravy, simply add more water to the stock.
